After discussing the movie Forks Over Knives with my nurse, Gloria, we swapped a few favorite simple recipes. Hers was this:

1 bunch curly kale
1/4 cup olive oil
Ground pepper & kosher salt to taste

Preheat oven to 350. Wash kale and remove tough stems. Tear or slice into bite size pieces. Pour in olive oil into a large mixing bowl and then add kale; massage with hands to evenly distribute the olive oil. Add salt and pepper to taste. Place kale in a single layer on foil-lined baking sheets and bake until crispy, approximately 10-15 minutes.
